Sometimes, the simplest ideas are also the best. Mackerel is very popular in the Netherlands, which is why Ellen came up with an idea for a simple, yet brilliant idea for a starter: why not pair it with the crunchiness of a Granny Smith apple? The result is a delight that captivates at first taste.
Marlene® apples have great sentimental value for Ellen, especially associated with her childhood. In the small Dutch village where her grandparents lived, the family owned several orchards full of apple trees, which were the gathering place for the whole family, where they would meet to pick the fruit and spend unforgettable moments together.

Smoked mackerel with Granny Smith

  • 1 Marlene® Granny Smith apple
  • 1 smoked mackerel fillet
  • 1 tablespoon mayonnaise
  • 2 teaspoons lemon juice
  • 1/2 teaspoon horseradish
  • 1/2 shallot
  • Fresh dill
  • Pepper
  • Salt
Recipe
Smoked mackerel with Granny Smith
Preparation
Cut the smoked mackerel into small pieces or strips. For the cream, mix the lemon juice, horseradish, chopped shallots, mayonnaise and half of the Granny Smith apple cut into cubes. Mix everything well and season with salt and pepper.
Presentation
Pour the mackerel cream into a bowl. Decorate with a “Mimosa” garnish of Granny Smith apple cubes and fresh dill.
