Inmaculada Calvo, from beautiful Spain, came up with the delicious cream of celery and Red Delicious with poached egg, ham flakes and apple flowers.
For Inmaculada, the goal was clear from the start: she wanted to create a savoury recipe for the Marlene® initiative. Passionate about creams, she decided to exploit the juiciness of the Marlene® apple, which is perfect with celery and many other ingredients. To enhance the Red Delicious, she was inspired by the roses in her vase, hence the idea of the magnificent apple roses.
When it comes to Marlene® apples, Inmaculada follows an old saying:
An apple a day keeps the doctor away.
This is why she regularly uses apples in cooking, especially because they are perfect for making tasty and healthy recipes.

2 Marlene® Red Delicious apples
3 celery sticks
1 leek
1 small potato

1 Marlene® Red Delicious apple cut into very thin slices

Cream of Red Delicious apple and celery with poached egg, ham flakes and apple flowers
Preparation
Preparing the cream
In a saucepan, fry the leek and celery with a little olive oil. Add the potatoes and apples, previously peeled and cut into pieces. Cover with broth or water and season with salt and pepper. Cook on a low heat for 30 minutes. Blend finely until smooth, seasoning with salt if necessary.
Preparing the flowers
In a saucepan, bring water to the boil with 1 tablespoon sugar and 1/2 beet to colour the water. Add the Red Delicious slices and cook them for about one minute, then remove them from the water. Let them cool and, once cold, shape them into flowers.
Presentation
Pour the cream into a plate or bowl. Place a poached egg on top, sprinkle with ham strips and toasted bread cubes, then decorate with Red Delicious flowers. Garnish with a few drops of parsley oil.
Presentation advice
It can also be served in individual glasses as a starter.
